Smoked Salmon Summer Recipe #MorrisonsMums

I first tried a dish similar to this decades ago in a restaurant and have spent years perfecting my recipe to be as good if not better than the one I ate back then - it is a family favourite, a quick and easy dinner party starter or ladies lunch stalwart I serve up time and time again.

I have only met one person who didn't like it - and they didn't like smoked salmon! People have asked me for the recipe many times and I know it has appeared as a Christmas lunch starter on many a table as well as being perfect to give your friends and family a summer lunch which feels indulgent but in a fact is cheap and easy to prepare.

Really impress your friends and serve it in just one layer on one piece of melba toast as a canapé at a Barbecue or picnic!

And here are the ingredients - a bit vague but I'm a fan of "bung it in" cookery. The quantities I quote probably serve 4-6.

I have listed Morrison's products because this is an entry into the #MorrisonsMum eBook challenge which requires me to produce a recipe using at least two items from their new everyday low price product list. Obviously you can substitute these for ingredients from your store of choice.


1 Morrisons "handselected" red onion. (or any red onion but this range is now cheaper than previously)

About 2-6 tbsp white granulated sugar (cheaper now!)

M Savers 100g smoked salmon (or any sliced smoked salmon)

300 ml creme fraiche - Morrisons carry a wide range in their everyday low price list including a low fat version.

Morrisons NuMe Melba Toast - 4 pieces of toast for each tower.

Garnish of your choice- I suggest black pepper and/or lemon slices.

And that's it! Follow the preparation instructions in the video layering toast, creme, fraiche, sticky sugared cooked onion and smoked salmon then repeat and you can't fail to impress!

I'm supposed to choose  one category to enter into - I think it would make a lovely light summer family meal but I have taken the prepared ingredients in a cool bag and built the towers at a picnic in the past (I'm not keen on sandwiches!)  so maybe the recipe would work equally well in the Picnic Favourites category!
