As a keen amateur chef the one thing I could not do without in my kitchen is my collection of good knives for prep. I even take a couple of decent knives when we go camping as I cannot bear working without quality knives.
When I helped my daughter choose kitchen essentials when she started uni I made sure we picked up a great little multi-purpose knife. I believe it's better to buy one or two good knives than an entire block of mediocre knives.
Over the years I have gradually improved the quality of the knives I buy and with the help of a good knife sharpener I have kept them in good condition.
